I still don't understand when and how you would use this feature. Could you provide an example?

There are a couple of items this addresses. The most common issue is, if you ever want to make edits to a curricula, you had to un-enroll and re-enroll everyone in that curricula for the changes to take effect. By using the site setting, it will automatically update everyone enrolled without needing to go through that step.
Some people also used Fixed Due Dates. For those who use Fixed Due Dates, adding the ability to look back X number of days before the due date helps them run a curriculum on a non-traditional calendar year.
Last but not least, our curriculum reports weren't particularly easy to use for recurring curricula because technically, there was never an end date. By adding an end date to the curricula, you're able to run reports a little easier.
